The Arrival

The day opens with a welcome: a first pour, something small and seasonal alongside, and the story of where you are. Unhurried from the first glass.

The Table

Two hours at the table, the chef's menu changing with the season and the soil. Wine paired, courses considered, conversation inevitable. This is the centrepiece.

Built around the producers

We built this around the people who grow, make, and serve. The format is progressive dining: a luxury food and wine experience across three estates in one day, with wine paired to the table and the makers often there to share it. The substance is the producers themselves.

Victoria has always drawn people who care about the land. Generational producers, kitchens that answer to the season, and estates where craft is the reason for being. Each edition draws on what that region does best.

Food that barely travels is the quiet sustainability at the centre of the format. Menus are built on what the estates and their neighbours grow, in the season they grow it, and served close to where it came out of the ground.
